Carrot Halwa



Carrot Halwa :



Carrot Halwa or Gajar ka halwa is one among my favorite sweet recipes.

Ingredients:

Carrot – 1 Kg
Milk – 1 lit
Sugar – 2 cups
Ghee – 1 cup
Cardamom Powder – ½ tsp
Cashews, Raisins - few

Preparation:

Wash and grate the carrot and keep aside.
Cashews must be shred into small pieces
Bring milk to boil


Method:

In a heavy bottom sauce pan add little ghee and grated carrots, sauté for 3 minutes till the raw smell disappears.
Add the boiling milk to it and simmer the stove.
For every 10 minutes keep stirring it. Repeat this step for 40 minutes
Add sugar and mix well. Cook till sugar is properly dissolved and milk is evaporated.
Add powder cardamom and stir it.
Finally in another pan add little ghee, fry cashew and raisins and add it to halwa.

Carrot halwa is ready to be served.


Variations:

You can replace carrot by beetroot or pumpkin.
