Phulka / Fulka / Roti







Ingredients:

Wheat flour – 2 cups
Water – as required
Salt – to taste
Oil – few drops
Ghee – little.

Method:

In a large bowl mix wheat flour and salt till it's nicely incorporated.
Add water little by little to this flour and mix to form soft dough
Now apply few drops of oil over the dough and close it with damp cloth.
Keep the dough aside for half an hour to one hour.
Knead the dough again nicely and make 2 inch diameter ball out of it.
Flatten the ball in between your palm.
Roll it in the dry wheat flour and dust off the excess flour.
Roll the dough with the rolling stick as thin as possible.
If you find the dough sticky, dip in the dry flour again.
Run your fingers on the dough to check if you have rolled the dough evenly. There should not be any folding in the dough that is rolled out.

Heat the tava first, Wait till it turns hot and then turn the heat to simmer.
Put the rolled out dough on the hot tava.
When bubbles become to form on the bottom side, flip it over to the other side.
Increase the flame to maximum, allow it to rise up like balloon and flip again.
When you see some brown spots take off from fire.
Apply some ghee on top and serve hot.

If you want to serve the roti later keep it in a hot case.
