Idiyappam / Rice Noodles

Idiyappam / Rice Noodles

This is a commonly a very healthy breakfast dish as its steam cooked. It is called Sevai in some places, idiyappam in some places and I have given it a name ‘Rice Noodles’. Rice is of 2 varieties, one is raw rice and other is boiled rice. This recipe is prepared with raw rice. Let me go into the recipe….



To prepare idiyappam flour:

Ingredients:
Raw rice – 2 cups
Method:  
Wash and rinse the raw rice with plenty of water and soak it for 2 – 3 hours.
Spread it in a paper towel and dry it.
It needs to be grinded to a fine powder either in mixie or in grinding mill.
Sieve and store it in an air tight box.

To prepare idiyappam:
Ingredients:

Idiyappam flour – 1 cup
Sesame oil – 2 tsp
Water – 1 ½ to 2 cups approx
Salt – as needed

Method:  

Boil water with salt and oil.
Take a wide bowl and add idiyappam flour into it.
Add water and knead it to soft dough. Add water little by little as it should not become excess. Close it with a damp cloth.
Take the idiyappam maker and grease the inside portion with oil.
Fill the idiyappam maker with the small quantity of dough and press it on the idli steamer in circular motion.
Steam it for 8 – 10 minutes. It is ready to serve.

Serve it hot with Vegetable Kurma J
