Bottle Gourd / Lauki Subzi


Bottle Gourd / Lauki Subzi:

Bottle Gourd has so many names like Lauki, Dhoodi, Ghia, Opo Squash, and Long Melon. Lauki has cooling effects. It can cure urinary disorders, nervous diseases, heart diseases, blood pressure, premature graying of hair. Apart from all these it’s low in calories and fat. It is a light vegetable with more water content. It’s easy to make and I would say its perfect recipe for kids too.
 
 

Ingredients:

Bottle Gourd – 1 (medium sized)
Onion -1
Tomato -1
Ginger – 1 inch piece
Green chilli - 2
Turmeric powder – ½ tsp
Cumin power -1 tsp
Salt – to taste
Coriander leaves - few
Oil – 1 tsp

Preparation:

Peel and chop the bottle gourd into small cubes.
Slit the onion length wise and chop the coriander into fine pieces.
Chop tomatoes into cubes and dice the ginger and green chillies into small pieces.

Method:

Take a pressure cooker and heat oil in it.
Add ginger to it and sauté for 1 minute. Now add turmeric powder stir
Add in onions and stir till well it becomes translucent.
Add green chillies, bottle guard, quarter cup of water and salt to taste.
Close the cooker and allow it to one whistle and let the pressure to release by itself.

Open the cooker, turn on the stove to low flame and add in tomatoes, coriander, cumin powder and mix well.
Allow the tomatoes to soften and liquid to reduce.
Smash down the bottle gourd with the back of the ladle and cook till it reaches the desired consistency of thickness.

Bottle Guard is ready J

Goes best with Rice / Chapatti / Pulkha / Roti.

Note:

This dish can be made in a pan instead of pressure cooker.
Add little salt as the amount of bottle guard reduces when cooked.
