Cauliflower Kurma Recipe:
Cauliflower is something that everyone will want to add in their regular diet as it has many health benefits. Cauliflower is studied for cancer prevention and antioxidant properties. It has dietary fiber that helps in digestion. One thing that needs to be taken care while cooking cauliflower is if you do not cook it properly then it will become mushy and lose its flavor.
Cauliflower – 1
Tomato – 2 (medium sized)
Ginger – half inch piece
Garlic – 2 cloves
Green chillies – 2
Turmeric powder – 1 tsp
Salt – to taste
Curry leaves - few
Oil – 2 to 3 tsp
Star anise – 1
Bay leaf – 2
To grind into fine paste
Poppy seeds – 1 tsp
Cinnamon – 1 inch piece
Cloves – 2 in number
Snauf – 1 tsp
Jeera – 1 tsp
Coriander seeds – 1 tsp
Red chilles – 4 in number
Roasted gram – 1 tsp
Black pepper -1 tsp
Coconut Shredded – 2 handful
Cut the cauliflower into big florets.
Wash the florets in running water thoroughly and keep aside
Grind the ingredients under the section to grind into a fine paste
Chop onion and tomato into fine pieces.
Slit the green chillies lengthwise.
Heat oil in the pressure cooker, when hot add bay leaf and star anise.
Add onion, curry leaves, green chillies and sauté well till onion turns pink in color.
Add tomatoes and sauté well till it becomes mushy.
Now add the grounded paste and sauté for sometime.
Add the cauliflower florets into the pressure cooker and mix it gently.
Add 1 cup of water turmeric powder, salt, close the lid.
Keep the flame in medium and turn off the cooker after one whistle
Allow the pressure to release by itself, open the lid and add coriander leaves.
Cauliflower Kurma is ready…
