Tomato Thokku is very simple recipe, one of my hubby’s favourite side dishJ
Ginger Garlic Paste – 1 tsp
Chillies – 4
Curry leaves – handful
Oil – 3 to 4 tsp
Mustard seeds – 1 tsp
Jeera – ½ tsp
Asafotedia – 1 tsp
Turmeric powder – 1 tsp
Chilli powder – 4 tsp (I use the kashmiri variety)
Dhaniya powder – 1 tsp
Fenugreek powder – ½ tsp
Salt – to taste
Chop the onions into fine pieces.
Slice the tomatoes into small pieces
Slit the green chillies.
Now add onion, curry leaves, ginger garlic paste, slit green chillies and sauté till onions turn pink.
Now add the sliced tomatoes and saute it well.
Add salt, turmeric powder, dhaniya powder, chilli powder, fenugreek powder and sauté well.
Remember to put the flame in medium and sauté it till the oil starts oozing out from the sides.
Switch off the flame and let it to cool.
Store it in an container in refrigerator for 2 weeks.
